The Great Steak
Comeback!
What do we mean by The Great Steak Comeback?
Two things in particular. First, The Great
Steak Comeback refers to a recent trend to
bring back steak as a featured item on
restaurant menus and/or the theme for the
restaurant itself. For years, steak enjoyed
a prominent position in menu placement and
popularity. National steak house chains
flourished, capitalizing on the strong
tradition of American-raised beef available
at an affordable price. They marketed
themselves as eateries where families could
eat out and enjoy the luxury of a good steak
dinner. They offered cuts for all budgets.
Chains like Long Horn and Outback
steakhouses could be found in many cities
and towns. But times changed as did American
diets and eating habits.
A keen awareness of healthy eating emerged
and suddenly cholesterol numbers and low fat
diets were the talk of the culinary world.
Many restaurants began featuring low fat,
heart healthy items. Chicken, fish, and pork
creations emerged as staples on menus. While
these items are still popular, the dining
public switched gears and re-embraced their
love for steak.
The second part of The Great Steak Comeback
is not just about your average steak! The
dining public has fallen for the highest
quality steaks they can find. Upscale
steakhouse chain restaurants like Ruth’s
Chris, Morton’s and The Capital Grille have
become popular serving the finest steaks.
These steaks are cut from livestock whose
diets are carefully controlled, often
“all-natural” - meaning no growth hormones
or additives and are well marbled, often
aged either “dry” or “wet” to produce an
incredible tenderness and rich flavor. Here
at the inn we have chosen Maine’s own
Wolfe’s Neck Farm to be our steak provider.
They produce the only all natural, organic
beef in the Northeast that is USDA graded
Prime. The farm has been marketing organic
and natural beef longer than any farm in
America. For a real treat, try our aged, 14
oz. USDA Prime NY Sirloin- it’s a steak
